什么叫慕斯蛋糕

慕斯是英文mousse的译音，它是一种以奶油，明胶，蛋黄，糖为基本原料的奶冻式的甜点。实际上，慕斯中不含面粉，并算不上是蛋糕。但我们通常会在慕斯层中间和底部加垫蛋糕，成为慕斯蛋糕。这样做可以消除单纯慕斯层的油腻感，给食客带来多层次的味觉体验。

慕斯的口感到底怎么来的？

在口感上来说慕斯是介于冰淇淋与果冻之间的一道奶冻式甜点。但它不像冰淇淋入口迅速融化，而是温柔地慢慢地融化。它又比果冻的Q弹柔软多了一种轻盈的气泡感。关于慕斯确实没有一个非常明确的定义。在打发至轻盈状态的淡奶油或者蛋白霜中加入凝固剂混合均匀，产生浓稠冻状的效果且具有轻柔、入口即化气泡感就是慕斯的基本做法。

慕斯的原料？

制作慕斯的原料主要有牛奶、鲜奶油、糖、吉利丁片、蛋黄、水果泥等。

做慕斯为什么要加淡奶油？

做慕斯蛋糕时，淡奶油要打到6成左右。在慕斯制作工艺中，打发的淡奶油起的是增稠的作用。还有起到使慕斯有弹性和体积膨大的作用。如淡奶油没有打发直接加入的话，那么同样是水相的淡奶油不足以在其中起到增稠填充的作用。一般情况下，如果淡奶油没有打发而导致慕斯浆太稀的话，是没有办法补救的。只有重新配料制作。如果淡奶油打的太硬也不行，会裹入过多的空气而导致慕斯的口感不够细腻不够爽滑，会有空洞感，这样也影响品质。不过，这个可以隔着温水，使浆料中奶油因为加热液化（重新变成水相，就不能持气了），再通过轻轻的搅拌，使慕斯浆恢复到所需要的稠度。

做慕斯常用原料？

牛奶 :

牛奶是形成慕斯体内最基本所需要的水分，用牛奶目的是提升口感和品质。如果用普通的水来代替牛奶，虽然可以制作但在风味，口感上远不如牛奶。特别是冻过后内部会存在很大的冰结晶（冰渣）。

淡奶油：

加入鲜奶油可以增加慕斯的天然奶香味，另一方面还可以使慕斯的口感更为细腻。通常，我们选用动物性鲜奶油，这是因为动物性鲜奶油乳脂防含量高，而植脂奶油味道稍逊，没有浓郁的奶香。

吉利丁：

吉利丁是慕斯制作中最不可缺少的基本材料。

糖：

糖分在慕斯体中，可促成体制更为细腻而柔软，更富有布丁状的良好弹性。糖的吸湿性强，有助于慕斯体内发的水分不会很快的流失掉。

蛋黄 ：

有些制作慕斯的配方是不添加蛋黄的，也有些配方是蛋白和蛋黄一起添加的。但我们认为，还是只添加蛋黄的慕斯口感最好。

这是因为蛋黄具有较好的凝结力和乳化作用，促成慕斯体的体质稳定并且调节动物胶脂过于弹性。也就是说蛋黄在慕斯的制作中起到了独有的独特的中和作用，这个中和作用来自于蛋黄中的一个成分：卵**脂。

水果泥 ：

水果泥的添加给慕斯蛋糕带来不同的清爽口味。在慕斯制作过程中，如果添加酸性比较大的水果泥，（比如芒果泥）建议把水果泥加热。减少其酸性。

酒 ：

慕斯的制作过程中，建议加少许（10毫升左右即可）酒，比如朗姆酒、白兰地等。这样一来可以给蛋黄杀菌，而来增加慕斯的风味。当然，如果您是做给小孩子吃，那就不用添加了。

慕斯与布丁一样属于甜点的一种，其性质较布丁更柔软，入口即化；。成品建议存放在2-4℃环境中。

做慕斯时为什么要加牛奶：

牛奶其实就是水的替代品，除了能溶解颗粒材料如糖，还能让慕斯的口感更爽口更好吃，也可促使慕斯质地更细致润滑。如果你不在乎这种口感，用水来代替完全没有问题，但是用加水做出来的慕斯容易形成冰渣（冰晶体）。

做慕斯时为什么要加吉利丁：

在慕斯常用的凝固剂就是吉利丁（鱼胶），吉利丁主要分为片状、粉状，在慕斯中吉利丁主要起到稳定结构的作用。如果不加的话，会怎么样呢？就会像本文中第一个问题出现的图一样，慕斯无法锁住水份，变成了冰淇淋，只能在急速冷冻中成型。

做慕斯时为什么要加鸡蛋：

追求口感的慕斯的慕斯基底中会通常会加鸡蛋。因为鸡蛋中含有卵凝脂的存在，搅拌后能产生很好的的凝聚力及乳化作用，并调节中和了动物凝胶的弹性，调整了凝胶过于弹性造成的布丁状口感，使慕斯的口感更加丝滑。

那种慕斯最好吃？

意式蛋白霜：在蛋白中加入熬煮糖浆打发就被称为意大利蛋白霜。意式蛋白霜因为口感清淡，不会影响原来调温酱的味道，适合：慕斯、马卡龙

面糊：蛋黄中加入熬煮的糖浆打发，就称作为炸弹面糊。炸弹面糊仅用到蛋黄，色泽鲜亮，口味上富有的醇厚感和深邃感。各种馅料、适合慕斯基底，冰激凌

黄油隔水融化或是微波炉加热30秒融化

六寸模具底部放一张油纸，然后把黄油倒入奥利奥饼干碎里面搅拌均匀倒入模具里面用勺子压平，放入冰箱冷藏半个小时备用

锅里加水烧热关火（烧热即可不需烧开，微热的状态下就可以融化绵白糖和吉利丁片的）放入牛奶盆，加入20克绵白糖搅拌均匀

可可粉分三次过筛筛入牛奶里，每次加入都要搅拌至无颗粒（可可粉比较难融化，分次加入会好一些）搅拌均匀后加入泡软的吉利丁片搅拌均匀融化即可，然后放在室温下冷却，冷却就可以了，不需要凝固

淡奶油加入20克绵白糖打发至纹路清晰，但是还要是流动状态（这里奶油不要打发过了）⬆️⬆️（PS：夏天淡奶油不太好打发，可以坐冰水盆里面会好打发一些。）

分两次把可可糊倒入打好的淡奶油里，每次都要翻拌均匀（记住是翻拌不是搅拌哦）

从冰箱取出模具，把翻拌均匀的慕斯倒入模具里面，放入冰箱冷藏四个小时以上（冷藏就好，冷冻会变硬哦）最好是隔夜

取出冷藏好的慕斯用吹风机对着模具旁边吹一圈，或是用热毛巾敷一下就可以轻松脱模了（记住不要吹太久或是敷太久，不然容易影响外观）脱模可以用手从活动底盘托起或是拿个比模具小的碗放在底部轻轻往下压就可以了
